Salmon Rice Balls
I’m always trying to think of sandwich alternatives for the kids’ lunches. These rice balls are easy to make and are a great meal not only for school but to take on picnics, or for a quick after school snack. You can even sneak them into your purse when you go to the movies, not that I would do that. (I totally do that.)
Canned salmon works fine but if you happen to have leftover teriyaki salmon), that’s even better. Add a little furikake for flavor and you’re good to go. Bonus: if you get your kids to help out, you’ve just cut your prep time in half!
Salmon Rice Balls
Ingredients:
3 cups cooked rice
1-1/2 cups salmon (cooked)
furikake
1 sheet of nori
Instructions:
The best way to make these is to use rice ball molds – but if you don’t have one, hold tight, I’ll show you how to do it without one later. But first – if you DO have a rice ball maker fill it about 1/3 of the way with rice, making a little ‘well’ in the center.
Spoon in the salmon, then place another scoop of rice right on top. Put the top on and PRESS. That’s it!
Now if you don’t have a rice ball maker, no worries – here’s an even easier way of doing it. Simply place the same mixture in a sheet of plastic wrap, squeeze tightly to form the shape and magically you have the exact same rice ball. Couldn’t be easier.
To add a little extra fun and make it a bit more authentic, you can cut a strip of nori (dried seaweed) and wrap it around the rice ball. These amazing nori punch cutters from Japan are too cute. Instant ninja!
