Sausage and Onion muffins
Sausage and onions are a match made in heaven. Put them together into a portable baked treat? Perfection.
These muffins are great for breakfast on the go or a mid-afternoon snack to keep you going until dinnertime.
Sausage and Onion muffins
Ingredients:
10 ounces kielbasa, diced
1 small onion, diced
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 cup whole milk
1 large egg
3 tablespoons unsalted butter, melted
1/2 cup shredded cheddar cheese
Instructions:
Step 1: Preheat the oven to 375 degrees. Prep a cupcakes pan with paper or silicone liners.
Step 2: In a skillet over medium high heat, cook the sausage until caramelized, about 8 minutes. Set aside.
Step 3: Add the onions to the same pan and cook for 5 minutes, until softened.
Step 4: In a large bowl whisk together the flour, sugar, baking powder, and salt.
Step 5: Make a hole into the center of the dry ingredients and stir in the milk, egg, and butter, until just until combined.
Step 6: Fold in the sausage, onions, and cheese.
Step 7: Spoon the batter into the prepped pan. Bake for 20 minutes, until browned and cooked through.
Step 8: Let cool for 5 minutes on a wire rack. Best served warm.
These are great. I have made muffins before with ham/bacon and cheese, but never thought of doing sausage or browning the onions first. They are wonderful. My husband and kids love them. They were ok the next day, but absolutely best while still warm.
