Shoyu Gohan

Fact: every Japanese kitchen has a rice cooker. If rice isn’t accompanying the meal is it even a meal? Probably not. Since the rice cooker is already doing its job, why not make it work for its money? This once pot meal is one of my favorite things to make because it’s so easy. Just throw everything in your rice cooker, turn it on and you’ve got dinner ready to go.

‘Shoyu’ means soy sauce and ‘gohan’ means rice, which is what this is: a mix up of flavorful rice with chicken and veggies, all thrown together and delicious. I often have the kids help out with this dish because it’s something that can be made on the fly with just a little prep.

Once you make this you’ll be glad to have your rice cooker doing double duty!

Shoyu Gohan

Ingredients:

2 cups uncooked rice, washed
1 cup rotisserie chicken, cooked and chopped
1/2 cup carrot, julienned
1/2 cup mushrooms, sliced
1/2 cup water chestnuts, sliced
1 (14 oz) can chicken broth
1/4 cup water
1-1/2 Tablespoons sugar
3 Tablespoons soy sauce
2 Tablespoons mirin
fresh ground pepper

Instructions:

Place the washed rice into the pot of the rice cooker. Layer the carrot, mushrooms, water chestnuts and cooked chicken on top.

Mix together the chicken broth, water, sugar, soy sauce, and mirin and pour on top of the rice mixture. Season with fresh ground pepper and start the rice cooker as usual.

When the rice cooker is done, fluff up the rice and mix it all together to serve.

  1. I havent had this in so long! My mom used to put bamboo shoots inside too. I think I need to make this soon, maybe with brown rice so I can pretend its healthy!

    I don’t recommend using a slow cooker – only a rice cooker will give the rice the correct texture!

    Thanks! This is a great recipe! I made it for dinner and it was quick and easy. Per another comment, I added some bamboo to it and I can see how it would be simple to adjust this to your own taste.

    The one thing I would recommend changing would be the amount of liquid. From 1 1/2 cups of chicken broth to 2 cups. My rice came out a little too firm for my liking. (1 can of chicken broth = 1 3/4 cup, so I think I’ll just add an add’l 1/4 cup of water to make the 2 cups.)

    This was DELICIOUS. I’m going to try to double it in a large rice cooker for my daughter’s birthday party next month. 🙂 I used a very small (3 cups, I think) rice cooker when I made it last month and I was monitoring the rice cooker the whole time. Not a good idea on my part.

    Agree with another commenter – I don’t think this was enough liquid. My rice came out really hard. It’s either 2 cups of rice with rice cup measurement or 2 standard cups with more liquid….
