Shrimp Burritos
Shrimp are a nice alternative to beef or chicken for burrito filling because they cook quickly and dinner will be ready in no time. What you really want to know is how to fold a burrito just right so that nothing falls out…
ingredients:
1 pound shrimp, rinsed, peeled and deveined
1 clove garlic
salt and pepper
flour tortillas
cheese
salsa
guacamole
Add a Tablespoon of olive oil in a pan over medium high heat. Add the shrimp and garlic and season with salt and pepper. Cook until the shrimp are cooked through and turn from gray to pink.
I like to fill my burritos with cheese, salsa and guacamole but you can add anything and make it your own.
Now, here’s how you roll an open ended burrito:
Place the flour tortilla down and add your filling 3/4 of the way down the middle. Fold the 1/4 empty part over the filling. Pull one side over, then fold the other side tightly. Turn the burrito over seam side down. Simple! You’ll never lose filling out of the bottom again!
According to the baby they also make perfect little ‘cups’ to hold the filling should you just want to eat it by hand like popcorn…
