simple Guacamole
California avocados are abundant and so it’s always a good time for guacamole. Not just for parties, I make fresh guac about once a week to go with tacos, flautas, chicken – it’s pretty much standard fare around here.
You can change it up with veggies or even fruit, but sometimes the simpler way is best.
ingredients:
3 avocados, quartered, seeded and peeled
2 roma tomatoes, diced
2 Tablespoons diced shallot
juice of half a lime
cayenne pepper, to taste
salt and pepper to taste
In a bowl mash the avocados, tomatoes, shallot and lime juice – together to your liking. Some people like it a little chunky, others totally mashed. I’m sure there’s a psych eval in there somewhere about what you like better.
Add the cayenne, salt and pepper. I taste it to get it to where I like it, but don’t forget your chips are probably salted too!
