Simple Pot Roast
Crock pot cooking is my jam. I love it because it allows me to plan, prep, then move on with my day.
And when it comes to all day cooking, there’s nothing more comforting than pot roast. It reminds me of a relaxing family dinner, hearty and full of vegetables. My kids like it so much—they ask for it every week—while I love it because there are very few ingredients and you just have to turn on the crock pot and all the work is done!
Simple Pot Roast
Ingredients:
1 onion, sliced
3-4 lb chuck roast
3 Tablespoons Worcestershire Sauce
1 clove garlic, minced
1/2 teaspoon oregano
1/2 teaspoon salt
freshly ground pepper
3 celery ribs, bias cut
2 carrots, bias cut
2 potatoes, cubed
1 cup coconut water
Instructions:
Lay the onions in the bottom of the crock pot and place the chuck roast on top.
Season with Worcestershire Sauce, garlic, oregano, salt, and pepper.
Add the celery, carrots, and potatoes along the side of the roast.
Pour in the coconut water.
Cover and cook on low for 6-8 hours.
