Snickers Cookies

Old Hawaiian church cookbooks have the best recipes. They always have a simple premise with a whole lot of flavor and the dessert section is no exception. I saw a recipe for cookie wrapped around a candy bar, what can be more delicious than that?

So I recreated it and updated it by adding peanut butter to the batter making this the ultimate in peanut satisfaction. Not the prettiest cookie, but let’s face it, it’s the inside that counts.

Snickers Cookies

Ingredients:

1 cup (2 sticks) unsalted butter, softened
1 cup peanut butter
1-1/2 cups brown sugar
1/2 cup white sugar
2 eggs
1-1/2 teaspoons vanilla
3-1/2 cups all-purpose flour
pinch of salt
1 teaspoon baking soda
60 mini Snickers (approx 2 bags)

Instructions:

Preheat the oven to 350 degrees. Prep baking sheets with silpats.

In the bowl of an electric mixer cream the butter and peanut butter until combined. Add the sugars – then the eggs and vanilla.

In a bowl whisk together the flour, salt and baking soda – add that to the mixture until fully combined. It will almost start to pull away from the sides of the bowl.

Now the fun! Take a ball of dough and flatten it out in your palm. Place an unwrapped Snickers candy in the center, then pull the sides together to enclose the candy. Roll it around a bit to make sure the candy is covered.

Bake for 10-12 minutes. Let cool on the pan – if you move them when they are warm, they may break. Once they’ve set a bit, let them cool on a wire rack.

A nice peanut buttery cookie treat!

    Hi! I just tried this recipe and my cookies are a bit crumbly, did you have the same problem? I saved some of the cookie dough. Is there anything you recommend that I add to the dough to prevent crumbling? Thanks!!

    Hm, no I don’t have that problem, the peanut butter should take care of that. Just work the dough until it’s nice and buttery then you should be able to manage it!

    I’m allergic to peanuts, but I loved your idea, I was thinking of making them with MilkyWays instead, but my question is can I take the peanut butter out of the recipe or will that mess it up?

    You’ll have to replace the peanut butter with something…more butter. I’m sure Milky Ways would be fab!
