Spam Mochi Waffles
I know, I get it. For anyone not living in Hawaii Spam might be considered a “four-letter word,” yes literally but you know what I mean. However if used in the right way Spam can be a glorious accompaniment! Like for Spam Musubi and um, Spam Musubi? Hm.
In any case, by combining it with my love of mochi waffles, you get an amazing chewy waffle with that perfect touch of breakfast saltiness to start your day. These are better than you can imagine, you’ll have to trust me on this. If you love mochi and you love Spam, here’s your recipe to start your morning.
Spam Mochi Waffles
Ingredients:
6 slices of spam, diced
1 cup all-purpose flour
1 cup mochiko
2 Tablespoons sugar
3 teaspoons baking powder
pinch of salt
1-1/2 cups buttermilk
2 eggs
Instructions:
In a pan over medium high heat, fry the diced Spam until just browned. Set aside.
Prep the waffle iron by brushing it with melted butter. The mochiko makes this batter pretty sticky, so you want to make sure you can get them out.
In a bowl whisk together the flour, mochiko, sugar, baking powder and salt.
Add the buttermilk and eggs and stir until just combined. Then stir in the Spam.
Ladle the batter into the prepped waffle maker and cook until golden brown.
Just when I think your recipes can’t get any better, you come out with Spam Mochi Waffles!

One question tho — no oil or butter in the mix? Is the Spam enough?
I guess you could also put it in Pancakes too! I’m lovin’ my Spam!
