Star Wars Vader Cherry Pie for Pi Day

I couldn’t let a March 14 – 3.14 – Pi Day go by without making a pie, now could I? When it comes to pie, I have my favorites, but incorporating Star Wars makes it even more fun.

This is a very simple dark side/light side pie. Tart, sweet cherries fill this buttery crust, all of it topped off with a very intimidating Vader. Don’t be afraid, there’s enough pie for everyone. This will be a day long remembered.

Star Wars Vader Cherry Pie for Pi Day

Ingredients:

you’ll need:
Darth Vader cookie cutter
pie dough

pie ingredients:
3-1/2 cups cherries, pitted
1 cup sugar
1/4 cup cornstarch
1 tablespoon lemon juice
2 teaspoons lemon zest
1 tablespoon unsalted butter
1/4 teaspoon vanilla
pinch of salt
2 tablespoons milk
sugar, for dusting

Instructions:

Preheat the oven to 375 degrees.

Divide the dough in half. wrap one half and keep in the fridge, roll and press the other half into a pie plate.

Add parchment and pie weights.

Parbake for 20 minutes. Let cool.

In a saucepan over medium-high heat, bring the cherries, sugar, and cornstarch to a boil. Once it’s thickened, remove from the heat.

Stir in the lemon juice, lemon zest, butter, vanilla, and salt. Let cool.

Pour into the pie shell.

Roll out the reserved dough and lay on half the pie, crimping the edges.

Use the remaining pie dough and a cookie cutter to cut out a Vader head. Place in the center.

Use a pastry brush to brush the dough with milk, then sprinkle with sugar.

Loosely wrap with foil and bake for 20 minutes.

Uncover and bake for another 25 minutes.
