Strawberry Guava Hello Kitty Cupcakes
The Baby loves Guava Jam on toast, it’s his favorite morning breakfast. At the market I happened upon a flavor I hadn’t seen before, a mashup of guava and strawberry! The sweet, floral fragrance reminds me of Hawaii and I thought it would be a perfect filling for cupcakes. I also went the extra mile and swirled into a luscious cream cheese frosting.
To top it all off, I found some cute Hello Kitty cookies. You’ll find no sweeter cupcake in all the land.
Strawberry Guava Hello Kitty Cupcakes
Ingredients:
2 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon of salt
3/4 cup (1-1/2 sticks) unsalted butter
2 cups sugar
3 eggs
1 teaspoon vanilla
1 cup whole milk
1 jar (10 oz) Strawberry Guava Jam
Strawberry Guava Cream Cheese frosting
Instructions:
Step 1: Preheat oven to 350 degrees. Prep a cupcake pan with liners.
Step 2: In a medium bowl, whisk the cake flour, baking powder, baking soda, and salt. Set aside.
Step 3: In the bowl of an electric mixer, cream the butter and sugar, until fluffy.
Step 4: Add the eggs one at a time, and stir until incorporated. Add the vanilla.
Step 5: Alternate the milk with the dry ingredients, until combined.
Step 6: Fill the prepped liners halfway. Add a Tablespoon of Strawberry Guava Jam into the center of the batter, then cover with another tablespoon of batter.
Step 7: Bake for 17-18 minutes depending on your oven. Let cool on a wire rack.
Step 8: When cool, frost with Strawberry Guava Cream Cheese Frosting and top with a cookie, to serve.
