Strawberry Mochi Cakes

I love mochi so much, I even wrote a book about different ways to eat mochi! Mochiko is a rice flour that gives baked goods a nice chew. From pancakes to cupcakes, mochi is a distinct ingredient that adds texture to recipes.

These Strawberry Mochi Cakes aren’t overly sweet, just chewy, delicious vanilla cakes and the addition of fresh strawberries balances out the flavor and sweetness perfectly. They lovely breakfast or portable afternoon snack.

Strawberry Mochi Cakes

Ingredients:

1/3 cup unsaltedbutter, softened
1 pint strawberries (rinsed, hulled, quartered)
1 cup all-purpose flour
3/4 cup mochiko
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
2 eggs
1/3 cup whole milk
1/2 teaspoon vanilla

Instructions:

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a small saucepan, bring the strawberries to a boil over medium heat for 2 minutes. Let cool slightly.

In a medium bowl whisk the flour, mochiko, baking soda, cinnamon, baking powder and salt. Set aside.

In the bowl of an electric mixer, cream the butter and sugar, then add the eggs until light and fluffy. Alternate the flour mixture with the milk until just combined.

Fold in the strawberries.

Pour into prepped liners, bake for 17-20 minutes depending on your oven, testing with a toothpick. Let cool on a wire rack.

    I got the liners at a Hello Kitty store, I stumbled upon them. Then, a reader sent me even more, which is great since there are only SIX in a pack!

    I really want to try these…but being that I have never worked with mochiko before, is there anything special I should know…like does it get gummy if stirred too much, etc? Thanks for posting all of your great recipes and ideas! I am so addicted to this site!!!

    I’m new to the baking scene . . . in the Mochiko Strawberry Cupcake recipe, when boiling the strawberries, is liquid added to the strawberries, or just the juices that come from the strawberries is enough?

    i just made a vegan version of these w/egg replacer (potato starch and tapioca flour) and whole wheat instead of all purpose flour. they turned out great! thanks jenn for such a great recipe! yay for mochi!
