Strawberry Pancakes

This summer the Kid has really helped out with the cooking. All those years of watching me has paid off because now I can sit back and let him run the show.* He’s on a pancake kick and since his Chocolate Chip Pancakes went so well last time, this time he incorporated fresh fruit which is always a nice touch for breakfast.

*He’s 8 years old which is still a bit young to be using knives and the stove but he has been helping me in the kitchen for years, should this post inspire you to let you child run free in the kitchen. Adult supervision is always advised.

Strawberry Pancakes

Strawberry Pancakes

Ingredients:

2 cups all-purpose flour
2 teaspoons baking powder
2 Tablespoons sugar
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla
4 ounces strawberry yogurt
1 cup whole milk
1 cup strawberries, chopped

Instructions:

In a bowl whisk together the flour, baking powder, sugar and salt.

Make a well in the dry ingredients and add the eggs, vanilla, yogurt and milk.

The Kid did all the chopping and thankfully listened well when I gave him a lesson on using a sharp knife.

Stir in the cut strawberries.

Strawberry Pancake prep

Place a griddle on medium-high heat and add butter to melt. Ladle out the pancakes.

When the tiny bubbles on top of the pancakes start to pop, flip the pancakes over and cook until done.

Serve with syrup and whipped cream, per the kid’s direct orders.
