Sweet Potatoes Two Ways and a Pyrex giveaway!

The new year is a good jumping off point for starting fresh. While everyone has good intentions of eating right, sometimes it’s hard to give up your favorite dishes. That’s why reinventing something you already love is easy with a few substitutions.

For the new year I’ve taken sweet potatoes to a whole new level. My original version is decadent and over the top, so I’ve changed it up to make it lighter but still maintain that sweet and delicious comfort food that is so familiar. A little change can go a long way in making you feel satisfied without weighing you down. The choice is yours of which you decide to make. No judgement in the new year!

Decadent Mashed Sweet Potatoes
4 sweet potatoes
1/4 cup creme fraiche
1/4 cup heavy cream
2 Tablespoons unsalted butter
2 Tablespoons brown sugar
1 Tablespoon Maple Syrup
1/2 teaspoon cinnamon
1 teaspoon vanilla
pinch of salt
2 Tablespoons brown sugar

Peel and cube the sweet potatoes and add them to a large pot of boiling water. Boil for 10 minutes or until fork tender, then drain.

Mash the hot sweet potatoes with the creme fraiche, heavy cream, butter, brown sugar, Maple Syrup, cinnamon, vanilla and salt until combined.

Spoon into a serving dish and sprinkle with brown sugar.


Lightened Up Mashed Sweet Potatoes
4 sweet potatoes
6 ounces low fat pumpkin yogurt
2 Tablespoons honey
1/2 teaspoon cinnamon
1 teaspoon vanilla
pinch of salt
1 Tablespoon honey

Peel and cube the sweet potatoes and add them to a large pot of boiling water. Boil for 10 minutes or until fork tender, then drain.

Mash the hot sweet potatoes with the low fat pumpkin yogurt, honey, cinnamon, vanilla and salt until combined.

Spoon into a serving dish and drizzle with honey.
