Thin Mint Cookie Brownies
In case you haven’t noticed it’s Girl Scout Cookie season! Back in the day we wore actual uniforms complete with socks and sashes. I used to go door to door, by myself I might add, and sell cookies to anyone and everyone. So when I see girls selling cookies, I can’t help but sympathize and buy up every box of Thin Mints I see.
With an abundance of Thin Mints, baking was inevitable and what better way than to put the cookie in a brownie, in the shape of a cupcake. It’s the Turkducken of sugar highs!
For mint lovers, these Thin Mint Cookie Brownies are heaven. Thanks Girl Scouts, see ya next year!
Thin Mint Cookie Brownies
Ingredients:
1 cup chocolate chips
1/2 cup (1 stick) unsalted butter
1 cup sugar
3 large eggs
1/2 teaspoon vanilla
1/2 cup all-purpose flour
1/4 cup cocoa powder
12 Thin Mint Girl Scout Cookies
Instructions:
Preheat oven to 350 degrees. Prep a cupcake pan with liners.
In a double boiler, melt the chocolate chips and the butter, stirring constantly. Once melted and combined, carefully take off the heat and let cool for a few minutes.
Whisk in the sugar until smooth.
Quickly add the vanilla and eggs, whisking constantly.
Stir in the flour and cocoa, just whisking until combined.
Spoon 1 Tablespoon of batter into each liner. Place one Thin Mint Cookie on top then cover with more batter, covering the cookie completely.
Bake for 20 mins. Let cool on a wire rack.

Okay, I’m going to justify buying another box of girl scout cookies just to make these brownies. We’ve already finished 8 boxes, but it’s for a good cause.

Where are you able to get the Valrhona cocoa powder? I have been searching all over for Valrhona chocolate in general for another recipe that a local chef uses – but he’s able to get it easily since he’s a chef – but I have been unable to find it in normal grocery stores in the Chicagoland area. Thanks for any tips….
