Thing 1 and Thing 2 Cupcakes

My good friend is having twins, a fun addition to her already wonderful family! Her fabulous friends decided to throw her a Dr. Seuss themed Thing 1 and Thing 2 baby shower and my small contribution was to make cupcakes!

They themed out the party perfectly and I wanted the cupcakes to match the red and blue colors. I decided that a quick and simple cupcake was the best way to integrate into the beautifully decorated scheme.

The ladies went all out and made potted plant centerpieces that were actually flower pens that they crafted for shower games, a smart and useful idea! Little cups of red candies filled out the color palette and did double duty as snacks and table anchors on this windy day. Punch and lemonade were served in tiny milk bottles, once again keeping with the stunning blue and red theme.

My favorite part of any party, the dessert table! Delightfully adorned with pom poms, the table already had an array of treats like chocolate cake, lemon bars, fudge and cookies. I loved the apothecary jars filled with red and blue gumballs. A lovely touch and just the right amount of color. Just as I had hoped, by baking my Thing 1 and Thing 2 cupcakes blended right in!

The ladies worked so hard and did a great job, the two new babies are going to be welcomed into this world with open arms and lots of love from family and friends!

Thing 1 and Thing 2 Cupcakes

Ingredients:

8 ounces cream cheese
1/4 cup (1/2 stick) butter
1 cup powdered sugar
1-1/2 teaspoons vanilla
pinch of salt
Sky Blue food gel dye

you’ll need:
12 red velvet cupcakes, baked in red folded parchment cupcake liners and cooled
white candy melts
edible ink pen

Instructions:

In the bowl of an electric mixer, beat together the cream cheese and butter. Slowly add the powdered sugar, salt and vanilla.

Add in a drop of the food gel dye and turn the mixer onto high until the color is incorporated and the frosting is light and fluffy.

Using a piping bag (no tip necessary), around the edges of the cupcake start piping large circles of frosting, pulling up at the end, letting go to form a point. The color and the strange look definitely gives a Dr. Seuss feel! Add a final dollop into the center.

Using the edible ink pen, write “Thing 1” and “Thing 2” on the flat side of each candy melt. Press gently into the pointy center of the cupcake, not all the way – just so they look like they are floating.

Once all the cupcakes are frosted and labeled as Thing 1 and Thing 2 they are ready to serve!
