Toffee Blondies w/Chocolate LEGO minifigs
This was part of the Kid’s LEGO party, here.
There’s something delicious and comforting about a square of buttery baked brown sugar. Since this was for the Kid, I made up some chocolate LEGO men as toppers. Quite the decadent combo.
ingredients:
1/2 cup (one stick) butter, melted
1 cup brown sugar, packed
1 egg
1-1/2 teaspoons vanilla
1-1/4 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup toffee chips
melted semi-sweet chocolate
Mmm…Skor toffee chips, that’s what makes these things dangerous.
Preheat the oven to 350 degrees. Prep an 8″ x 8″ pan with melted butter and flour. Set aside.
In a large bowl combine the melted butter and brown sugar. Add the egg and vanilla.
Add the flour, baking powder and salt and stir until combined. Stir in the toffee chips.
Spread the batter into the prepped pan. Bake for 25+ mins depending on your oven. Let cool and cut into squares.
Now you can incorporate chocolate right into this but since this was for a LEGO party, well, I just had to use my little LEGO minifig molds.
In a double boiler I melted the chocolate down, then poured it into the molds. Let it sit in the freezer to chillax, then pop them right out. PERFECT little minifigs. I placed them right on top of the cooled Blondie squares and they were ready to for the party!

Where on earth did you get those cool molds? I´m from Denmark where Lego is made but I have never seen them as molds before! Really cool
