Trail Mix cookies
If the words trail mix brought you here thinking you were going to get a healthy recipe, I’m sorry this ain’t it. I eat a lot of trail mix, at times when I’m so busy during the day it’s my only sustenance. Most people eat trail mix to keep up energy while hiking or out camping…or to eat while sitting on the couch while you catch up on late night TV. Let’s just say we all have our sports.
I do buy premade trail mix but sometimes I combine a bunch of my favorite flavors to make my own. Salted nuts, honey roasted peanuts, raisins, chocolate chips, the combinations are what makes every handful unique and delicious. Feel free to adjust this recipe with your favorite combination.
Sure taking all those flavors and texture and putting it into a cookie makes it a little less good for you, but go ahead and run an extra mile to make up for it. I’ll be over here eating all the cookies.
Trail Mix cookies
Ingredients:
2-1/2 cups all-purpose flour
1 teaspoon baking soda
pinch of kosher salt
1 cup (2 sticks) butter, softened
1 cup brown sugar
3/4 cup white sugar
1 teaspoon vanilla
2 eggs
1 cup chocolate chips
1/2 cup salted cashews
1/2 cup honey roasted peanuts
1/2 cup raisins
Instructions:
Step 1: Preheat the oven to 350 degrees. Prep baking sheets with parchment or silpats.
Step 2: In a bowl whisk together the flour, baking soda, and salt. Set aside.
Step 3: In the bowl of an electric mixer, cream the butter, brown suga,r and white sugar.
Step 4: Stir in the vanilla and the eggs.
Step 5: Add the dry ingredients and stir until just combined.
Step 6: Fold in the chocolate chips, cashews, honey roasted peanuts, and raisins until everything is incorporated throughout the mixture.
Step 7: Scoop the dough by the tablepoon and place on the prepped baking sheets 2 inches apart.
Step 8: Bake for 12-14 minutes until browned, depending on your oven. Let cool on a wire rack.
My mom wasn’t happy about the 2 sticks of butter, but we made them and they were delicious!!!!!
