Turkey & Apple Pitas
The holidays were great but what to do with that leftover turkey? Hm…
The kids love apples and I tend to buy a TON every week at the Farmer’s Market. By pairing green apples with leftover roast turkey in a pita you get a nice tart crunch and topped off with a homemade tzatziki it’s a great use of leftovers for lunch!
ingredients:
1 pita cut in half
1 cup roasted turkey, cooked
1/2 cup green apples, sliced
1 small carrot, julienne
4 Tablespoons homemade tzatziki sauce (recipe here)
Slice the pita in half and open it up like an envelope. Fill both sides evenly, laying in the sliced apples, carrots, then the chicken. Spoon the tzatziki sauce inside. Add a side of pita chips and hummus and your boring Thanksgiving turkey leftovers have turned into a quick and healthy lunch!
