Twilight Sparkle cookies

My friend Thom Zahler is known as the very talented artist and writer of Love and Capes but he also just released his very first My Little Pony comic from IDW! The book features Twilight Sparkle, who also happens to be my favorite pony because she loves to read! A good trait to have indeed.

I made these cookies for Thom but I also made them for my friends Amy, Brian and Drea – who just happen to be drawn as ponies in the comic. How cool is that?

These cookies start off with the amazing Twilight Sparkle cookie cutter from WarpZone on Etsy. They require a little bit of piping but if you leave them plain any pony/cookie fan would love them just the same! Twilight Sparkle cookies

Ingredients:

3 cups all-purpose flour
1/2 teaspoon baking powder
1 Tablespoon lemon zest
pinch of salt
1 cup (2 sticks) unsalted butter
1 cup sugar
1 egg
1 teaspoon vanilla
violet food gel dye

white icing
black icing
pink icing

Instructions:

In a bowl whisk together the flour, baking powder, lemon zest and salt. Set aside.

In the bowl of an electric mixer cream the butter and sugar. Add the egg and vanilla.

Add a few drop of violet food gel dye and stir.

Slowly add the flour mixture until combined. The flour will lighten the color so add more food gel dye if necessary.

Mix on medium high until the dough pulls away from the bowl.

Separate the dough into two discs and chill in the fridge.

When you are ready to bake, preheat the oven to 350 degrees and prep baking sheets with silpats.

Roll out the dough to 3/8″ thick and flour the cutter before pressing down.

Move the cookies to the prepped baking sheets and bake for 10 minutes. Let cool on a wire rack.

Using the white icing and a #3 tip, detail the white of the eye first, followed by the black pupil.

Use a #3 tip to detail Twilight Sparkle’s pink highlights as well as the cutie mark. Then go in with white frosting and a #2 tip to detail the white parts of the cutie mark. Now your Twilight Sparkle cookie is ready!

    Love it! I have been coveting those cookie cutters for some time now! Good to see that they really do produce sharp lines on the finished cookie.

    I, too, know one of the artists for the MLP comics! I bet he would love some of these cookies. That’s an excuse to buy the cookie cutters, right? 😉
