Vegan Matcha Sugar Cookies

Whether it’s allergies or just an aversion to animal-based products, you don’t have to give up desserts – Vegan cookies are a possibility!

These Vegan cookies are great for rolling out dough and cutting a lot of cool shapes for decorated cookies. They hold their shape well and take to Vegan icing without a problem. The added flavor of matcha aka green tea, not only gives it a pleasant taste but gives these cookies a beautiful color from natural ingredients.

You’ll hardly see a difference between these cookies and regular ones, they look, smell, and taste just like a regular sugar cookie!

Vegan Matcha Sugar Cookies

Ingredients:

3 cups all-purpose flour
1 Tablespoon cooking Matcha (powdered green tea)
pinch of salt
1 cup (2 sticks) unsalted Vegan buttery sticks
1-1/4 cup sugar
2 Tablespoons applesauce
2 Tablespoons Soy Milk
1/2 teaspoon vanilla

Instructions:

In a bowl whisk together the flour, Matcha, and salt. Set aside.

In the bowl of an electric mixer cream the Vegan buttery sticks and sugar. Add the applesauce, soy milk, and vanilla until combined.

Add the flour mixture until combined. When it pulls away from the sides of the bowl, the dough is ready.

Wrap up the dough in plastic wrap. Refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats or parchment.

Roll out the dough and use a cookie cutter to cut out shapes.

Place the cookies on the prepped cookie sheets.

Bake for 10 minutes, let cool on a wire rack.
