Veggie dishes for kids
June 20 – Today is officially the first day of summer! While visions of pool parties and all-day playing come to mind, so does the heat and I’m not a fan. Hot weather makes me want to cook less and I remember my mom always making easy things to eat in the summertime that barely involved turning on the oven.
For me that also means going vegetarian. Summer fruits and veggies are spectacular here in LA and it usually gets me out to the local Farmer’s Markets at least twice a week. Here are a few easy veggie-centric recipes that my kids love to eat for summertime meals:
Oven Roasted Corn (recipe here) + fresh Guac (recipe here)
This is a big hit with the kids because summertime corn is so sweet – no butter or extras necessary, though you can always do those too.

This is the Kid’s favorite dish and it’s mine only because he is able to do all the prep and assembly himself!

Rice? Nope – tricked you! This sushi is all noodles and by coming up with it I won 2nd place in a kids eats recipe contest!

Mini Baked Potatoes (recipe here)
The fun thing about these is that kids can choose their own toppings and make what they want. They are small enough (as big as a Lego minifig) that you can have a few potatoes and change the toppings for each one!
