Yoda Rainbow Piñata Cookies
On St. Patrick’s Day everyone knows rainbows lead to a pot of gold but if you’re really lucky, they’ll lead to cookies. You may think these Star Wars matcha cookies look like the oldest leprechaun on Dagobah, but it’s just Yoda! His greenish tone is a natural fit for St. Patrick’s Day.
These cookies are stacked, with the center one hollowed out and filled with colorful sprinkles. When the cookies is broken, a rainbow surprise is revealed!
Yoda Rainbow Piñata Cookies
Ingredients:

Yoda cookie cutter
icing
rainbow sprinkles
ingredients:
3 cups all-purpose flour
1/2 teaspoon baking powder
pinch of salt
1 Tablespoon matcha (green tea powder)
1 cup (2 sticks) unsalted butter, softened
1 cup sugar
1 egg
Instructions:
In a medium bowl whisk together the flour, baking powder, salt, and matcha. Set aside.
In the bowl of an electric mixer beat the butter and sugar until combined. Add the egg.
Slowly add in the flour until it is incorporated. The dough will form quickly, and when it starts to pull away from the bowl, it’s done.
Split the dough into two and wrap in plastic wrap. Chill until you are ready to use.
Preheat the oven to 350 degrees. Prep baking sheets with parchment or silpats.
Roll out the dough to 1/4-inch thick. Cut out the dough, keeping mind that each cookie needs three pieces.
On one of the cookies, use a knife to cut an outline 1/4-inch away from the sides. Remove the center to make a hollow cookie.
Bake for 10 minutes and let cool on a wire rack.
Once the cookies are cool, use icing to stack the hollow cookie on top of a solid cookie. Fill with sprinkles.
Use the icing to seal the top cookie onto the two other cookies.
Once the icing is dry, the cookies are ready to serve.
