Bacon Corn Chowder
Is it winter? Because here in LA I’m wearing shorts. Sorry East Coast, I know your winters are rough and in my show of commiseration let’s all enjoy a bowl of piping hot soup.
Chowders are thick and warm, like a big bowl of hugs. The chunky almost stew-like consistency of this corn chowder is made even tastier with the added richness of bacon.
Serve this up with some cornbread muffins and you’re sure to survive even the mildest of winters.
Bacon Corn Chowder
Ingredients:
6 slices bacon, diced
2 Tablespoons unsalted butter
1/2 onion chopped
2 Tablespoons all-purpose flour
32 ounces chicken broth
2 potatoes, peeled and diced
1 (16 oz) bag frozen corn
1 cup heavy cream
1 teaspoon salt
fresh ground pepper, to taste
Instructions:
Cook bacon in a large pot over medium high heat until crisp. Take out the crisp bacon pieces and set aside.
Pour off the bacon grease, add the butter and onions. Saute until soft.
Stir in the flour and cook through for 1-2 minutes.
Pour the chicken broth into the pot along with the potatoes. Bring to a boil. Reduce to a simmer and cook until the potatoes are tender, about 10 minutes.
Stir in the heavy cream. Add the corn and the cooked bacon back into the pot. Simmer for another 5-7 minutes. Season with salt and pepper.

great recipe! i agree with chopping the bacon beforehand – saves time! i’ve done a similar version that doesn’t have potatoes but uses mainly the same ingredients, but with minced garlic, smoked paprika and crushed red pepper. it’s then garnished with green onions. about 1/3 of the soup is pureed then put back into the pot.
