Banana Cupcakes

In an effort to come up with as many recipes as possible for a Kid with chocolate and nut allergies, I knew I’d have to reach out to the banana and become friends. We’re more like frenemies, I’m not ready to give up my banana animosity quite yet.

This soft and fluffy cake is wonderful on it’s own but swirled with Cinnamon Buttercream or some chocolate ganache, and it becomes absolutely heavenly. The banana and I might just become friends after all.

Banana Cupcakes

Ingredients:

1-1/2 cups flour
3/4 cup sugar
1/2 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) butter, melted
3 mashed bananas
1 Tablespoon honey
2 large eggs
1 teaspoon vanilla

Instructions:

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a bowl, whisk together flour, sugar, cinnamon, baking powder, baking soda and salt. Set aside.

In a separate bowl, mix together the butter, mashed bananas, honey, eggs and vanilla. Add the flour mixture a little at a time – make sure you don’t overmix!

Spoon the batter into the liners. Bake 14-16 minutes depending on your oven. Let cool on a wire rack.

I like to top these with cinnamon frosting. Oh and monkeys, of course.

    Another great recipe! My first try at cupcakes. For me, the frosting, though very tasty, could be less sweet. Would it work with less sugar, or would that ruin the consistency? But you’re right, the banana flavor of the cake is perfect!

    I got the monkeys at a kitchen supply store, they are for cocktails really – they are made of plastic but the kids like to play with them…
