Banana Yogurt Muffins
The kids adore bananas but I’m not totally sold. However, using them for baking and suddenly I’m bananas for bananas. They add a natural sweetness to muffins that can’t be beat.
Muffins are the quickest breakfast there is and the best part is, no mixer necessary! Just a bowl and a spoon and just like that you’ve mixed up a muffin fit for a primate supervillian. Now he just has to fight the Baby for them…
Banana Yogurt Muffins
Ingredients:
2 cups all purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
3 bananas, mashed
1/2 cup (1 stick) butter, melted
2 eggs
4 ounces banana yogurt
1 teaspoon vanilla
brown sugar to sprinkle
Instructions:
Preheat the oven to 350 degrees. Prep a muffin pan with liners.
In a large bowl whisk together the flour, sugar, baking powder, cinnamon and salt.
Make a well in the dry ingredients and add the bananas, melted butter, eggs, banana yogurt and vanilla.
Fill the liners about 3/4 full, and sprinkle the top with a bit of brown sugar.
Bake for 15-18 minutes depending on your oven. Test with a toothpick, Let cool on wire racks.
I *may* try these, because you’d think my kids are monkeys, they like bananas so much. (What is wrong with them? Unless it’s a plantain… ick!) They also eat TJ’s Vanana yogurt like it’s going out of style, so that’d be perfect in here, too. Thanks for the recipe!

It’s 1:47am and I am not sleepy yet. I decided to check to see what goodies you have. I will definitely try this one. I just love bananas, I know that you don’t but me and my keikis love it and so do my grand kids! Mahalo for always having wonderful recipes!!!

Tried the recipe yesterday for breakfast and the kids and the husband loved them. Too bad we don’t have that banana yogurt at our Trader Joe’s but I used the big tub of the Vanana yogurt instead and it came out great. Thanks for the great recipe!
Verdict: they loved them as banana muffins, and today I adapted them as pumpkin muffins! They are delicious both ways, and they make a very light pumpkin muffin. Perfect for Turkey Day Morn!
Is the temperature correct? I baked them for 16 minutes at 350 and they were not done at all. I just turned them up to 400 so hope they don’t burn.

LOVE this recipe. I had to substitute vanilla greek yogurt for the TJ’s banana yogurt.
The batter was tasty. I am just waiting on the muffins now!
