Red and Blue Oven Roasted Potatoes

Getting kids involved in cooking is the key to getting them interested in eating healthy and trying a variety of different things. When we go to the farmer’s market I have them pick out one ingredient and then we’ll use that ingredients to come up with a recipe together. This week the Kid chose Blue Potatoes and the Baby chose Red ones. Potato side dish, it is!

Potatoes and bacon go hand in hand, the flavor can’t be beat. Oven roasting the potatoes was an easy choice to showcase the colorful spuds. Getting kids interested in ingredients and cooking will make them eager to be adventurous in their meals!

Red and Blue Oven Roasted Potatoes

Ingredients:

4 strips of bacon, diced
1 pound red and blue potatoes
2 Tablespoons olive oil
2 cloves garlic, minced
salt
pepper

Instructions:

In a skillet over medium high heat cook the bacon until crisp. Drain and set aside.

Preheat the oven to 400 degrees. Prep a baking pan with foil or parchment.

Wash and dry the potatoes, then cut into chunks.

In a bowl toss the cut potatoes with the olive oil and garlic, seasoning with salt and pepper. Pour into the baking pan and toss with the bacon.

Cook for 40 minutes until fork tender. Serve warm.
