Shrimp and Bacon salad
Shrimp. Bacon. Corn. Tomatoes. How can you resist this combination?
ingredients:
5 strips of bacon
1 pound medium shrimp, cooked (rinsed, peeled, deveined of course)
1 cup corn
1 cup grape tomatoes
1 clove garlic, chopped
3 Tablespoons Lemon Juice
5 Tablespoons olive oil
Salt
Pepper
Rinse and dry the shrimp.
Cook the bacon to a crisp. You can do it on the stove or try it in the oven. Whatever works best for you. Set aside to drain.
In a small bowl combine the garlic, lemon juice and olive oil. Set aside.
In a large mixing bowl combine the already cooked shrimp, corn and tomatoes. Rough chop the bacon and add it in.
Pour the lemon juice dressing over the shrimp mixture. Toss to coat, salt and pepper to taste.
I like to make this for parties or for a quick side dish, but it’s definitely a meal in itself.
